30 Days of Recipes – Banana Nut Bread

Banana (Nut) Bread

1/3 cup shortening
3/4 cup sugar
2 eggs
1 3/4 cups flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 cup mashed ripe bananas
1 cup chopped walnuts (optional)

Preheat oven to 350F. In a large bowl, cream together shortening and sugar; add eggs and beat well. Sift together flour, baking powder, salt and baking soda. Add to creamed mixture. Stir until mixed. Stir in bananas and nuts, blending well.

Pour into well greased loaf pan. Bake for about 50 minutes or until done. Remove from pan; cool on rack. Wrap and store overnight.
